To commemorate the fun and tradition that are synonymous with Mardi Gras, New Orleans native Huguette Vincent Jones shares some of her personal culinary favorites tonight. You’ll enjoy a festive Mardi Gras Salad, Fried Shrimp & Oyster Po Boy's, Red Beans & Rice, and King Cake from Henri's, and sample the signature cocktail of Bourbon Street – the Hurricane! Put down the cocktail shaker – we are talking about the savory and sweet culinary sauces for which New Orleans cuisine is known. If you’ve ever been to The Big Easy and enjoyed their local fare, chances are you’ve tried at least one of these tempting creations that adorn everything from shrimp, fish and steak to the sweet versions served with dessert. Huguette is back in the kitchen today to whip up some of the standards. Today you will enjoy Marchands de Vin served with fried Steak; and Creole Sauce – served over grilled fish, but equally great in Shrimp Creole. You’ll also learn how to make a basic Roux which Huguette will use as a base for her Gumbo. Then on to succulent Crabmeat Imperial which can be incorporated into or served atop a variety of dishes; and New Orleans original Bourbon Sauce served with a sweet Bread Pudding. Learn to make these for yourself and create a little piece of N’Awlins in your own kitchen!
